Before you arrive
Check the meeting street in your confirmation. The point can occasionally shift, but any alternative stays within a five-minute walk and you hear about it first.
The first drink
An Aperol spritz arrives with the group, and a mixologist shows how Italians make a good one. Use it to meet the people you will be sharing a table with.
Hands in the dough
Once the music is on and the Hugo spritz is poured, you knead, roll and cut your own pasta from scratch. Nobody expects you to know how; the point is to get your hands into it.
The sauce decision
Carbonara or cacio e pepe. Decide before you reach the board, because the dough does not wait for opinions.
Sitting down
Everything you cooked goes on the table, and you eat it together. Drink water between spritzes; soft drinks and water are unlimited.
