Cacio e pepe
Cacio e pepe belongs to Lazio, the region around Rome. Its whole sauce is grated pecorino romano and black pepper, and because the cheese can clump, getting it silky is the skill to watch.
Carbonara
Carbonara is the other choice, and the class finishes your pasta with whichever one you pick.
Choosing for a group
If you are with friends, split the choice so you can taste both across the table. The class does not require everyone to pick the same one.
